I love “the look” of freshly made Pico De Gallo. This simple & easy Pico De Gallo recipe can be used as a healthy snack, a party appetizer, or a fresh side to just about any Mexican dish. By the way, I can and do eat this Pico De Gallo recipe all through the year. It’s just that scrumptious!
Simple & Easy Pico De Gallo Recipe
Ingredient List
Makes 2 cups | Use organic ingredients
10 Roma tomatoes
1/2 large red onion
2-3 jalapenos (seeds removed)
1/4 Cup fresh Cilantro (stems removed)
1/2 fresh lime (juice)
Himalayan Salt to taste
Optional Ingredients: 1-2 finely chopped garlic cloves, a drizzle of extra virgin, black pepper, cold pressed olive oil and/or chopped avocado can be added.
Chop tomatoes, onion, jalapenos and cilantro into a medium bowl. Chopping jalapenos – cut the jalapeno in half lengthwise and scrape out all the seeds and membranes from inside the pepper. Wash hand thoroughly after chopping jalapenos or any type of peppers. Squeeze fresh lime juice over ingredients and salt to taste. Let sit at least 1 hour.
Hint: When chopping the tomatoes, place them into a strainer with a bowl underneath to catch all the juice of the tomatoes. You won’t have all that extra liquid in your Pico de Gallo and the finished product will look even more fresh and delicious!
