You will absolutely fall in love with this healthy, delicious cucumber spinach and avocado salad dressing. Perfect for your vegetable trays, salads, or as a dip for your healthy snacks — not to mention that it is packed with amazing nutrients and flavor.

Great in salads, fresh juices, and by themselves, one of the most important health benefits of cucumbers is they do an excellent job in refreshing and hydrating the body, especially since they contain 95% water. There are many reasons to eat cucumbers all year long. Containing vitamin K, B vitamins, copper, potassium, vitamin C, and manganese, cucumbers can help you to avoid the nutrient deficiencies which are widespread among people eating the Standard American diet. Caution: According to the Environmental Working Group, Cucumbers have been ranked in contaminated food lists due to their pesticide content. I highly recommend choosing organic cucumbers over conventionally grown varieties or grown your own.

Cucumber Spinach and Avocado Salad Dressing Recipe

Ingredients

(Always use organic ingredients when available.)

½ C purified water
½ organic cucumber, peeled and chopped
1 C organic spinach
1 organic avocado (peeled)
½ C organic cilantro, parsley, or mint (or a combination)
¼ C organic scallions
2 cloves organic garlic
2 T organic lemon juice (freshly squeezed)
2 T organic cold-pressed olive oil (optional)
1 T nutritional yeast (optional; aka savory yeast)
½ tsp Himalayan salt (optional, or to taste)
1/2 tsp Pepper (optional, or to taste)

Instructions

Wash all vegetables thoroughly. Combine ingredients in a high-speed blender and blend until creamy and smooth. Place in bowl or jar. Cover and refrigerate all leftovers.
