Tomato Salsa with Cucumber Chips

There is absolutely nothing like homemade tomato salsa with cucumber made with organic or fresh-from-the-garden tomatoes and cucumbers. Don’t you agree? All the ingredients in this robust tomato salsa provide many great health benefits on their own and, when combined, provide a salsa that will have your family and guests returning for more. This recipe is refreshing and similar to pico de Gallo — whatever you’d serve that compliments pico de gallo also works for tomato salsa with cucumber chips. Add cucumbers as “chips” or even in the salsa itself and other fresh veggies if you like. This entire recipe is low-calorie, vegan, and absolutely perfect for your next cookout, family and friends get-togethers, and even sports events such as Super Bowl Sunday. Tomato Salsa with Cucumber Chips also makes a beautiful presentation (don’t forget yummy) for a luncheon buffet. Enjoy!

Tomato Salsa with Cucumber Chips Recipe

Always use organic ingredients when available.

Ingredients

  • 1 1/4 pounds tomatoes, finely chopped
  • 1/2 cup finely chopped sweet onion
  • 1/2 cup finely chopped cilantro
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons fresh lime juice
  • Himalayan salt and freshly ground pepper
  • 1 large seedless cucumber, sliced 1/4 inch thick

Directions

In a bowl, toss the tomatoes with the onion, cilantro, jalapeño, and lime juice and season with salt and pepper. Serve the salsa with the cucumber chips for dipping.

How to Store Tomato Salsa with Cucumber Chips

Store in an airtight glass container in the fridge. Depending upon the freshness of your ingredients, this salsa recipe can last for about four days in the fridge. However, in our home, it usually doesn’t last longer than the day it’s made.
